Crab Salad

Crab is among my favorite spring and summer foods, in part because it can be quite versatile. Here, you’ll find classic crab salad, but with a few alterations in order to make the dish a bit more healthy than the original, which typically contains far more cream cheese. I prefer this on multigrain bread instead of in a hot dog bun.

What you’ll need:
6 oz crab meat
1 tbsp cream cheese
2 tbsp cottage cheese, whipped
1/8 cup scallion, chopped
1/4 cup fresh squeezed lemon juice
1/2 tsp crushed garlic
1/4 tsp cayenne pepper
Black pepper

Drain and pat dry the crab meat.

Then, put the crab in a mixing bowl and stir in the cream cheese, cottage cheese, scallion, lemon juice, garlic, and pepper. Serve on bread, over a salad, or with crackers.
