Coffee Chocolate Chip Biscotti

I was originally planning to make plain chocolate chip biscotti when I stumbled across a box of Starbucks VIA packets and wondered if I could incorporate it somehow. By mixing the instant coffee with the batter, I was able to make coffee-flavored biscotti using real coffee. The result was a deliciously strong cookie perfect for after dinner cappuccinos (or even morning lattes).

What you’ll need:
1 cup sugar
3 eggs
3/4 canola oil
1 tsp vanilla
1 tsp cinnamon
1 tsp baking powder
6 oz chocolate chips
1 Starbucks VIA packet or 1 tbsp instant coffee
3 cups flour

Directions:
Preheat to 350.

In a bowl, mix the sugar, eggs, and oil with a fork.

Add in the vanilla, cinnamon, baking powder, and chocolate chips.

Then, add in the flour.

Coat hands with olive oil and make into a log. Place the log on a parchment paper-covered cookie sheet and bake for 30 minutes.

Slice the dough diagonally and bake for an additional 30 minutes. Let cool.
