Just because summer is coming doesn’t mean you have to skip out on carbohydrates completely. Whole wheat penne is one of my personal favorites and it goes quite well with broccoli rabe and chicken sausage. I prefer spicy chicken sausage because it adds an extra layer of flavor to this dish, but it isn’t necessary.
What you’ll need:
2 cups whole wheat penne
1 cup chicken sausage, sliced
1 1/2 cups broccoli rabe
4 campari tomatoes, chopped
2 tsp fresh garlic, chopped
1/4 cup dry white wine
Red pepper flakes
Pecorino romano cheese
In a large skillet, saute the sausage in olive oil until it is lightly browned and cooked through.
Meanwhile, boil the broccoli rabe and cook the pasta separately.
Remove the sausage and heat more olive oil in the same skillet. Stir in the garlic and add the broccoli rabe. Saute the broccoli rabe for 1-2 minutes before adding the tomatoes. Break up the tomatoes with the back of a large spoon and stir.
When the pasta is cooked al dente, return the sausage to the skillet. Strain the pasta, but save 1/4 cup of the pasta water. Stir the pasta, pasta water, and wine into the skillet and cook for another minute.
Plate and top with red pepper flakes and pecorino romano cheese to taste.
