Baked Stuffed Apples

In gearing up for BTR’s upcoming Fitness Week, I thought it best to wean readers off heavy holiday pies without going cold turkey. These baked apples are both the perfect seasonal dessert and practically guilt-free. Just be careful with the ice cream.

What you’ll need:
6 Rome apples
1/2 cup walnuts, crushed
1/2 cup dried cranberries
1 tsp granulated sugar

Preheat the oven to 350.

Wash and core the apples.

Pour a bit of water into a baking pan and place the apples in it.

In a plastic bag, combine the crushed nuts, berries, and sugar. Spoon the mixture into the cored part of the apples and spray a bit of Pam on top.

Bake for 30-45 minutes or until the apples are soft.

Let cool and serve with ice cream or whipped cream.
