Avocado Tuna Melt

For today’s recipe, I thought it would be fun to combine two of my favorite lunch foods: the tuna melt and the avocado toast. This sandwich has a bit of sweet, savory, and spicy all in one, on top of the fact that it also contains a good deal of protein and healthy fats.

One small disclaimer is necessary here, however: you will absolutely want to mash the avocado rather than adding slices or else it will be too messy to eat.

What you’ll need:
1 ciabatta roll, sliced in half
1/2 can tuna, drained
1/2 avocado
1 slice sharp cheddar cheese
1 tsp olive oil mayonnaise
1/2 tsp relish
Red pepper flakes

In a small bowl, combine the tuna with the relish and mayonnaise. Mix together with a fork and set aside.

Toast the roll. Spread the tuna on top of one half and mash the avocado on top with a fork. Sprinkle red pepper flakes to taste on top of the avocado and add the cheese.

Add the other half of the roll and heat in a covered saute pan until the cheese melts. Slice in half and serve.
