During the week, it isn’t always easy to get in a full and hearty breakfast. Like many Americans, I sometimes succumb to my local coffee shop’s breakfast sandwiches on offer. Instead of buying a greasy sausage, egg, and cheese, make a lighter-fare protein-packed breakfast sandwich at home using smoked salmon.
What you’ll need:
2 slices sourdough bread
3 slices smoked salmon
1 slice provolone cheese
First, fry the egg in a small pan using the olive oil. When the egg is finished, remove it from the pan and crack some black pepper on top.
Layer the salmon, egg, and cheese on one slice of bread. Close the sandwich with the other slice of bread and spread margarine in the two outer sides of the bread.
Add a small bit of margarine to the pan and let it melt. Place the sandwich in the pan and fry until both sides are browned and the cheese is melted. Cut in half to serve.
