This dish is savory and just a little bit sweet, with crispy skin and tons of delicious pan shmaltz! Try this one when you want a simple home-cooked meal, sure to please any guest.
What You’ll Need:
Salt and pepper
One Mandarin Orange
Two full chicken legs (thigh with drum still attached)
Sprinkle salt, pepper and paprika on chicken.
Heat olive oil on medium-high in cast iron.
Slice lemon, salt slices to encourage crystallization. Place lemon slices in pan and char. Remove and place on plate to the side.
Place chicken in pan: skin should stick. Cook until browned, when skin naturally releases from pan (about three minutes) flip and repeat on other side.
Add the fresh-squeezed juice of one mandarin orange. Place sprigs of lime and charred lemon slices on top of chicken. Reduce heat, and cover.
Cook for approximately 20 minutes, or until chicken is cooked-through. (You can tell chicken is fully cooked when you slice into the joint between drum and thigh and the juices run clear).
Serve, and enjoy!
