Boiled Peaches

Unfortunately, as the final week of summer begins, fresh summer fruits have made themselves scarce. I recently bought a bag of peaches from my local farmer’s market that turned out to be too mealy to eat. Instead of letting them go to waste, I cooked them to bring out the natural sugar and to soften them up. This is an easy two-step recipe that pairs well with all kinds of desserts.

What you’ll need:
6 peaches, quartered and pitted
1/4 cup water
1/4 cup orange juice
1/2 tsp Truvia

Bring the peaches, water, orange juice, and Truvia to a boil in a small pot. Then, let simmer until the peaches are soft. Stir and refrigerate overnight before use.

Serve over ice cream, pie, or cake.
