Most of the people who know me know how much I love food, but only those closest to me know just how much I love sandwiches. I probably eat too many of them (sometimes two a day), but part of that comes from the ability to create anything I want and put it between two slices of bread. Sandwiches don’t have to be lame and can sometimes require just as much preparation as any other meal.
If you make sandwiches because you love them and not just because you’re feeling lazy, then I highly suggest making this one. It includes fresh homemade hummus (I promise it’s easy), avocado, and spinach. It’s also awesome.
What you’ll need:
2 slices rye bread
3-4 pieces sliced chicken breast
1/2 cup spinach
1 slice cheddar cheese
1 tbsp sweet hot pepper hummus
Make the hummus.
Once the hummus is whipped together, toast the bread.
Then, mash the avocado on one slice of bread with a fork and spread the hummus on the other. Add the chicken, spinach, and cheese. Cut the sandwich in half and serve.
