My first attempt at using kale instead of spinach in a smoothie was pretty much a total failure. The flavor of spinach is much less potent than that of kale, and thus it can be masked more easily by the inclusion of some yogurt and fruit.
With kale, this is not so. The second time I tried, I felt the need to not only include yogurt and some fruit, but also a bit of honey and cinnamon to heighten the sweetness and eliminate the bitterness. The cinnamon also works to stave off hunger, so it’s a win-win.
What you’ll need:
1 cup kale
3/4 cup cashew milk
1/2 cup nonfat Greek yogurt
1/4 tsp cinnamon
3/4 tsp honey
First, slice the apricot away from the pit and place it in the bottom of a blender or Magic Bullet. Add the cashew milk, yogurt, cinnamon, honey, and some ice. Before adding the kale, you may need to shred it.
Then, blend until smooth and serve in a tall glass with a straw.
