I’m quickly learning that buying produce for one person isn’t easy. Half of the time, I run out of what I purchase too quickly, while the other half of the time leaves me with far too much food to eat before it spoils.
In an attempt to limit my personal food waste, I use as much as I can in smoothies and when something starts to reach its overripe stage, I cut it up and place it in the freezer. This way, I can still use it for a smoothie and it won’t spoil.
This recipe calls for a frozen peach, but that’s simply because I had to freeze my own. If you have a fresh peach, just remember to add ice to your blender.
What you’ll need:
1 cup nonfat Greek yogurt
1 peach, sliced and frozen
1/2 medium carrot, sliced
3/4 cup skim milk
Combine all of the ingredients in a blender or Magic Bullet. Pulse until smooth and serve in a tall glass with a straw.
