Honey Chia Pudding

Chia seeds have long been considered beneficial to nutrition. It wasn’t until recently, though, that I started finding them on offer in my local food stores. So, I did some snooping around to see how great the seeds really are. As it turns out, they’re pretty great; they contain high levels of fiber and protein, while they are also low in calories.

What makes them so interesting is the fact that they are relatively tasteless and can expand when they are placed in liquids.

With this in mind, I made chia pudding, which tastes almost exactly like tapioca pudding. It’s the perfect breakfast when you’re in a hurry because you can prepare it the night before, eat it on the go, and stay full until lunchtime.


What you’ll need:
1 cup soy milk, unsweetened
1 tsp chia seeds
1/2 tsp honey

Directions:
Combine the three ingredients in a glass or jar. Mix well, cover, and refrigerate for at least 45 minutes to an hour.

After this time, the chia seeds should absorb the milk, expand, and create a tapioca pudding-like texture. If not, continue to refrigerate until the desired texture is reached.

Then, serve with a spoon. Add any fruit to taste.
