Seafood Potato Salad

Throwing a last minute dinner party? Just looking for a midday snack? Either way, this seafood potato salad will suffice. It’s simple to throw together, but stands out in a sea of over-mayonnaised potato salads. In fact, this one contains no mayo at all.

What you’ll need:
1 can tuna, drained
1-2 yukon gold potatoes, cubed
1 1/2 tbsp nonfat Greek yogurt
1 tbsp lobster meat, canned and chopped
1/2 cup spinach, torn
Black pepper
Old Bay

Directions:
First, bake the potatoes on 425 for about 25 minutes. Let cool.

Then, combine the potatoes, tuna, yogurt, lobster, and spinach in a mixing bowl. Add black pepper and Old Bay to taste and mix well.

Refrigerate before serving.
