Herbed Grilled Chicken

This simple, summery grilled chicken recipe requires just seven household ingredients to make. Fresh rosemary joins together with lime juice, garlic, and pepper to create an aromatic and zesty dinner that is healthy and easy to move from outdoors to indoors if the weather isn’t cooperating.

In the event that your grilling plans are interrupted by rainstorms, simply saute the chicken in the olive oil and marinade instead of throwing it on the grill. In this case, I also suggest incorporating a small amount of white wine and an equal amount of lemon or grapefruit juice.


What you’ll need:
3 chicken breasts
1/4 cup lime juice
2 sprigs rosemary, torn
3/4 tsp garlic, chopped
1/2 tsp black pepper
1/4 tsp oregano, dried
Olive oil

Directions:
Combine the pepper, lime juice, rosemary leaves, garlic, and oregano in a mixing glass. Add about a quarter cup of olive oil and stir well.

Place the chicken breasts in a pie pan and pour the marinade over it. Drizzle additional olive oil to taste and let sit for about 15 minutes.


Then, grill the chicken on medium heat with the grill closed. When the chicken is cooked through, pour over any leftover marinade on top. Slice to serve.
