As far as breakfast meats go, bacon is definitely not my first choice (I know, I know). I love the flavor, but I generally feel like it isn’t filling enough for the amount of fat and calories. That said, who am I to deny the glory that is bacon and maple syrup together? So, I opted to heighten those two flavors by also including spicy cheese and peach preserves in a most delicious grilled cheese recipe.
What you’ll need:
2 slices panella bread
2 strips bacon
1 slice jalapeno pepper jack cheese
1 slice light cheddar cheese
1 tsp peach preserves
Fry the bacon in a small pan. When the bacon is finished cooking, remove it from the pan and pat it dry with a paper towel.
Place the cheese on one slice of bread and top with the bacon. Spread the peach preserves on the other slice and put the slices together. Butter the outside of both sides of the sandwich.
Heat some margarine in the pan used to cook the bacon. Place the sandwich in the pan and cook until both sides are browned and the cheese melts.
Cut the sandwich in half, plate it, and drizzle some maple syrup on top to serve.
