Grilled Tuna Salad Nicoise

What’s better after a long weekend of drinking too much and eating processed meat than a nice, big, easy-to-make, healthy (!!!) salad? Honestly, not too much in my book.

This summery take on a classic salad nicoise is perfect for helping your body get back on track for a regular workweek and it’ll certainly make you feel better, both mentally and physically.

What you’ll need for the tuna:

1 1/3 lb sashimi grade tuna steak
Olive oil

Directions:
Brush the tuna steak in oil and grill for two minutes per side with the grill open. Slice the fish and plate in a serving dish.

What you’ll need for the salad:

3-4 eggs, hardboiled
3 cups Boston lettuce, roughly chopped
1 cup heirloom cherry tomatoes, sliced
1 cup sugar snap peas
1/2 cup sweet hot red peppers, sliced
1/2 cup artichoke hearts
1/2 cup assorted olives

Directions:
On a large serving platter, arrange the lettuce, tomatoes, olives, peppers, artichokes, eggs, and peas.

Serve alongside the tuna and allow your dinner guests to serve themselves.
