Chili Lime Butter Chicken Tacos

Tacos are among the most group-friendly meals to serve because they allow your guests or family to create their own. For these, I laid out several options, but I’ve found that the best combination with the ingredients below includes the chicken, corn, avocado, lettuce, yogurt, and pomegranate seeds.

What you’ll need for the corn:
3 ears corn
2 tbsp light butter
1 tbsp shallot, diced
Juice of 1/2 lime
2 red chili peppers, chopped

Grill the corn until it is lightly browned, then remove it from the cob and place it in a serving bowl.

Combine the butter, shallot, lime juice, and pepper in a dish. Then, spoon the butter into the corn and mix with a fork until the butter is evenly distributed and melted.

What you’ll need for the chicken:
1 1/2 lbs chicken breast, rinsed and trimmed
1 cup white wine
1 tsp poultry seasoning
1 tsp adobo seasoning
1 tsp garlic, minced
1 tsp Florida seasoned pepper

Marinate the chicken in the wine and seasoning for at least one hour.

Then, grill the chicken until it is cooked through. Use two forks to pull the chicken apart and place the pulled chicken in a bowl to serve.

What you’ll need for the taco fixings:
6-9 taco shells, toasted
2 cups baby bibb lettuce
1 dozen grape tomatoes, halved
1 avocado, cubed
1/2 cup pomegranate seeds
Plain nonfat Greek yogurt

Place the taco shells on a large serving plate alongside the lettuce, avocado, and tomatoes. Put the salsa, pomegranate seeds, and yogurt in separate dishes to serve.
