Memorial Day Weekend may be over, but the summer is just getting started. So, there’s no reason to put away the grill until next weekend. As a matter of fact, one of the simplest warm weather dinners to prepare is a batch of homemade burgers. These healthy chicken burgers are packed with spinach and mushrooms, so you won’t have to feel guilty serving these to your family.
What you’ll need:
1 lb ground chicken
2 oz baby bella mushrooms
1 1/2 cups baby spinach
2 tbsp feta cheese
1 tbsp garlic powder
1 tbsp poultry seasoning
1 tbsp adobo seasoning
In a mixing bowl, beat the eggs and mix in the chicken.
Then, add the shallot, spinach, and mushrooms to a food processor. Process until the vegetables are finely chopped.
Remove the vegetables from the processor and add them to the chicken and eggs. Sprinkle in the seasoning and mix thoroughly with a fork. Add the feta and mix to combine.
Line a plate with waxed paper and sprinkle with breadcrumbs.
Form the mixture into patties, place them onto the plate, and sprinkle additional breadcrumbs on top of the patties. Place a second sheet of waxed paper on top of the patties and refrigerate for at least two hours.
Grill the patties for about 5-7 minutes per side or until crisp and cooked through before serving.
