Tilapia with Chili Lime Butter

I mentioned yesterday that I’ve been experiencing an influx of tomatoes thanks to my healthy garden. This time of year also brings tons of ripe peppers and my family grows several varieties. One of the easiest ways to incorporate fresh peppers is to make a butter sauce for fish or chicken. In this case, I used chili lime butter on tilapia.

What you’ll need:
2 filets tilapia
2 tbsp light butter
1 tbsp shallot, diced
Juice of 1/2 lime
2 red chili peppers, chopped
1 tbsp olive oil
Flour for dredging

Combine the butter, shallot, lime juice, and pepper in a dish.

Coat the tilapia in flour. Heat the oil in a pan and saute the fish for approximately 5-7 minutes per side or until golden-brown.

Plate the fish and top with the butter to serve.
