Today, the spring/summer salad series continues with a Spanish-inspired ensemble replete with deliciously sweet and smoky combinations. The salad dressing is a take on one I found at a local Spanish restaurant and, while I’m sorry to say that the restaurant is no longer in business, the salad dressing does quite well in my household.
What you’ll need for the dressing:
2/3 cup olive oil
1/3 cup balsamic vinegar
1 tbsp ketchup
1 tsp cumin
1 tsp chili powder
Mix the above ingredients in a salad dressing bottle or small jar. Shake vigorously to combine and let stand at room temperature.
What you’ll need for the salad:
1 cup spinach
1/4 cup endive, chopped
1/4 cup grape tomatoes, halved
1/4 cup sweet hot red peppers, chopped
1/4 cup spicy Spanish olives, halved
Toss the ingredients in a salad bowl and add cranberries and pepitas to taste. Drizzle the dressing on top to serve.
