If you enjoy salmon, you should certainly try arctic char if you haven’t yet. This fish is similar in hue and texture with a subtler flavor lending itself to plenty of seasoning options. This recipe serves up a good dry heat thanks to a fresh pepper mixed with a nice smoky finish thanks to the grill.
What you’ll need:
1 1/2 lbs arctic char
Juice of 1/2 lime
1 tbsp olive oil
1 tsp Penzey’s Arizona Dreaming
1 fresh cayennetta pepper, chopped fine
1/4 cup white wine
In a measuring glass, combine the lime juice, olive oil, seasoning, pepper, and wine. Whisk together and marinate the fish for about 15 minutes. Grill for 5-7 minutes per side and serve.
