From time to time, I crave something a little more homestyle than what I usually cook. Crispy fried chicken is probably my all time favorite food, but because of the health drawbacks I rarely consume it. I’m still looking for ways to perfect the at-home lightly fried chicken breast, but the chicken on this sandwich comes pretty close and it certainly satisfies my cravings.
The chicken on its own is one of the easiest recipes I’ve curated thus far. When you come home from work and you have no time to marinade or stand around waiting for the oven, throwing all of the seasonings together in a bag with the chicken is the perfect solution. Seriously, this is dinner in under 10 minutes.
What you’ll need:
1 Portuguese roll
2 pieces chicken breast, trimmed
1 slice cheddar cheese
2 tbsp breadcrumbs
1/2 tsp poultry seasoning
1/2 tsp cumin
1/2 tsp garlic powder
1/2 tsp onion powder
Red pepper flakes
Place the chicken breasts in a plastic bag. Drizzle in some olive oil and add the breadcrumbs, poultry seasoning, cumin, garlic powder, and onion powder. Add red pepper flakes to taste and shake well to coat the chicken.
Then, heat some olive oil in a pan. When the pan is hot, fry the chicken until it is cooked through.
While the chicken is cooking, fry the egg in a separate pan.
Mash the avocado on one half of the bread and place the slice of cheese on the other. Top with the chicken and the egg to serve.
