Grouper in Chili Sauce

It is bitterly cold across almost the entirety of the United States this week and with that comes the urge to eat heavily in order to keep warm. It is, however, Fitness Week here on BTR so we’ll be warming up a little differently–with spices. This fish recipe is low fat and low carb, but is packed with flavor (and protein).

What you’ll need:
1 1/2 lbs grouper, floured
6 campari tomatoes
1/2 white onion, minced
1 1/2 cups fish stock
1/2 cup dry white wine
2 tbsp olive oil
1 tbsp berbere seasoning

Directions:
Preheat oven to 175.

Saute the fish for four minutes per side in the olive oil. Then, keep warm in the oven.

In the same pan, saute the onion and tomatoes for about five minutes before adding the wine. Cook down and add the fish stock. Then, let simmer for five more minutes before adding the berbere seasoning.

Plate the fish and spoon the sauce on top to serve.
