Sausage + Mushroom Pasta

What you’ll need:
1 1/2 cups whole wheat shells
2 chicken and garlic sausage links, sliced
3 oz baby bella mushrooms
3 oz baby arugula
1/2 shallot, chopped
Juice of 1/2 lemon
1/2 cup dry white wine
1 tsp garlic, chopped
Olive oil
Black pepper
Red pepper flakes
Pecorino Romano cheese

Cook the pasta.

While the pasta is cooking, heat the garlic and olive oil in a large skillet. Add the shallot and saute until translucent. Stir in the mushrooms and sausage and let cook until the sausage is lightly browned. Add the wine, lemon juice, and some black pepper to taste. Stir and cook down for about 2-3 minutes.

When the pasta is finished, add it to the saute pan. Stir to combine and add the arugula for just a minute or two until it wilts. Serve in bowls and top with the cheese and red pepper flakes to taste.
