Baked Purple Potato Chips

Making potato chips at home is probably one of my favorite activities to do in the kitchen. The task is an easy one and the result is far better than a bag of chips (not to mention more filling). These are almost always a crowd pleaser and can be made any time of year, though you may not find purple potatoes during the winter months.

What you’ll need:
6 purple potatoes, sliced thin
1 tsp black pepper
1 tsp sea salt
1/2 tsp lemongrass
1/2 tsp cayenne pepper
4 sprigs rosemary
Olive oil

Preheat the oven to 425.

Combine the potatoes, black pepper, sea salt, lemongrass, and cayenne pepper in a large mixing bowl. Pour in some olive oil and stir to coat the potatoes.

Drizzle some olive oil onto a large cookie sheet and spread the potatoes out. Garnish with the sprigs of rosemary and drizzle a bit more olive oil over the top of the potatoes.

Bake in the oven for 45 minutes or until the potatoes are lightly browned. Serve in a large bowl.
