Sausage + Cauliflower Fusilli

By Christmas Eve, it’s possible that many are completely tired of holiday food. If that’s not the case and you’ve got big plans for a classic Christmas dinner tomorrow, you may be looking for something almost entirely different for tonight. This recipe is still seasonal in flavor, but certainly poles apart from a holiday ham.

What you’ll need:
2 links chicken sausage, sliced
1 1/2 cups fusilli
1/2 head cauliflower, florets only
1 shallot, chopped
1 tbsp garlic, chopped
1/4 cup roasted almonds, chopped
1/4 cup giant raisins
1/4 cup fresh squeezed orange juice
Olive oil
Pecorino romano cheese
Red pepper flakes

Cook the pasta.

Saute the shallot in olive oil and garlic. Add the cauliflower and cook for a few minutes before adding the orange juice, almonds, raisins, and sausage. Stir and cook until the sausage starts to brown.

Then, stir in the cooked pasta and plate it. Add the red pepper flakes, cheese, and additional olive oil to taste.
