As a big fan of fried chicken, I spend most weeks trying to avoid it or else I’d eat it for every single meal. I’m constantly looking for ways to make certain items healthier—or at least a little less unhealthy. This mole chicken is “fried” in the oven with just a little bit of olive oil and flour. It may not be totally guilt-free, but it’s pretty darn close.
What you’ll need:
6 chicken wings
2 chicken thighs
1 chicken breast, halved
1 cup mole sauce
1 1/2 cups flour
Marinade the chicken in the mole sauce for at least 45 minutes.
Then, preheat the oven to 400 degrees.
Heat some oil in a large roasting pan in the oven for about 10-15 minutes. While the pan is heating, dredge the marinated chicken in the flour.
Remove the pan from the oven, place the chicken in the oil, and bake on 425 for 25 minutes. Then, turn the chicken and bake for 25 more minutes before serving.
