Remember fish tacos? Fresh watermelon salad with feta? Ribs and burgers and sausages on the grill? Sorbet or ice-cream for dessert at any time of day?
I do. The thought of these delicious summer treats make my mouth water, and, if I close my eyes, I can almost feel the sun baking my bare skin and the mosquitos buzzing, disrupting my otherwise perfect day.
Around the end of February, everybody in the Northeast starts pining for summer. Outside of the beach days, outdoor concerts, endless days, and promise of magical romance, summers also provide some of my favorite culinary treats.
While the winter months leave me resenting the tasteless, limp, green-things-passing-for-vegetables which sully my meals, summer produce is bright and fresh–it’s luscious juicy tomatoes, and sweet snap peas. It’s fresh herbs so aromatic they intoxicate your senses. It’s a peach so ripe that you can hardly eat it without making a mess.
Just thinking about it transports me to an altogether better place and time.
So, these last few weeks of dreary winter, just remember that there’s a light at the end of the tunnel. And that light is buttered corn on the cob.
