Super Bowl kickoff is tonight, which means all of the fattening foods you’ll likely be confronted with will be hard to ignore. One strategy is not to eat until tonight, but I find that this only makes it harder to control intake. Instead, I eat a hearty and filling brunch so I won’t be quite as tempted later.
What you’ll need per sandwich:
2 slices semolina bread
1/2 avocado, sliced
1 slice jalapeno pepper jack cheese
Fry the eggs over medium in some olive oil and toast the bread simultaneously.
Once the eggs are finished, top the bread with the eggs, avocado slices, and cheese. Put the sandwich in the pan and cover until the cheese melts.
Cut the sandwich in half and serve.
These are quick and easy enough to make more than one at a time, which makes them perfect for serving your friends and family while everyone gears up for tonight.
