Red, White, and Blue Fruity Fun

In the spirit of BTR’s Birthday Week (and of course, America’s 237th birthday this Thursday), I’ll be doing my best to bring to you a week’s worth of red, white, and blue treats and meals. Today is Monday and as you know, I often like to dish out some healthy, energizing breakfasts to start the week. Thankfully, strawberries and blueberries are in season here (and they are red and blue!).

What you’ll need for the Red, White, and Blue Breakfast Bowl:
3-4 strawberries
1/2 cup blueberries
2 tbsp Greek nonfat yogurt
1 cup plain Cheerios mixed with Kashi
1/2 cup homemade trail mix (walnuts, almonds, pecans, dried cranberries, raisins)

Directions:
Wash the blueberries and strawberries. Then slice the strawberries and add the fruit to a medium-sized bowl. Top with the yogurt and pour the cereal and trail mix over. Mix together with a spoon so that the yogurt lightly coats the fruit, nuts, and cereal.

What you’ll need for Red, White, and Blue Parfait:
6-8 strawberries
1/2 cup blueberries
1 cup plain nonfat Greek yogurt
1 tbsp clover honey

Directions:
In a tall glass, add a layer of sliced strawberries, then a layer of yogurt. Alternate between layers of strawberries and yogurt until there are at least 3 layers of strawberries. Then, add a layer of blueberries and top with the honey. Lo and behold: healthy American flag parfait!

These two breakfasts are great options for celebrating Independence Day all week without consuming too much in the way of barbecue food. Enjoy!
