Orange is the New Black Week is nearing its end, but not without a healthy and delicious dessert. I’m just another sucker for pumpkin everything, but I’ve not attempted pumpkin mousse before this week (nor have I had it previously). This recipe is low in fat and even has a bit of protein, so there’s no need to feel guilty when indulging.
What you’ll need:
2 1/2 tbsp plain nonfat Greek yogurt
2/3 cup canned pumpkin
1/2 cup almond milk, unsweetened
1 tsp vanilla extract
1/2 tsp pumpkin pie spice
1/4 tsp cinnamon
2 tsp turbinado sugar or 1 packet Splenda
In a bowl, combine the yogurt and pumpkin. Fold the pumpkin and yogurt together with a spoon. Add in the milk and vanilla before whisking. Add in the rest of the ingredients and mix with a hand mixer until light and fluffy.
Pour the mousse into single-serve glasses and refrigerate for at least 25 minutes.
Top with whipped cream and serve.
