Mushroom and Spinach Chicken Burgers

By the time Labor Day rolls around, I’m usually sick of basic barbecue foods like hot dogs, hamburgers, and macaroni salad. For those of you who are feeling adventurous enough to try something new, these chicken burgers are simple to make and will pleasantly surprise your guests.

What you’ll need:
1 lb ground chicken
2 eggs
5 oz crimini mushrooms
1 oz fresh baby spinach
1 scallion, green part
1/2 cup bread crumbs
1/2 tbsp garlic powder
1/2 tbsp Florida seasoned pepper
1 tsp berbere seasoning

Beat the eggs in a bowl and add the chicken. Mix thoroughly. Chop the vegetables and stir everything together with a spoon. Mix in 1/4 cup bread crumbs and all of the seasoning.

Line a plate with waxed paper and sprinkle the remaining bread crumbs on the plate. Form 6 patties with your hands and spread the bread crumbs over the patties.

Refrigerate for at least 1 hour before grilling each burger for 5 minutes per side.
