Coffee and Garlic Grilled Salmon with Vegetables

Sometimes the best summer dinners are the ones that are easiest to make. This weekend around here wasn’t a great one in terms of sunshine and warmth, but the better weather occurred in the evening. Instead of wasting the nicest part of the day doing prep work and cooking inside, I opted to exert the minimal amount of energy into dinner.

Typically, I don’t rave about a specific product, but the Trader Joe’s BBQ Rub and Seasoning with Coffee and Garlic is just about the weirdest, most delicious combination I could think of in barbecue rub form. This was the first time I tried it, but it certainly will not be the last.

What you’ll need for the salmon:
1 1/2 lbs wild Alaskan salmon
2 tsp Trader Joe’s BBQ Rub and Seasoning with Coffee and Garlic

Season the salmon with the rub and place it on top of tin foil. Grill the salmon on the tin foil for about 7 minutes.

What you’ll need for the vegetables:
2 zucchini, sliced
1 green bell pepper, sliced
1 red bell pepper, sliced
4 oz baby bella mushrooms, sliced
1 tsp black pepper
1 tsp onion powder
1 tsp Hungarian sharp paprika
1 tsp garlic powder
Olive oil

Place the sliced vegetables and seasoning in a large plastic bag. Shake well to combine and add some olive oil. Shake again and grill in a copper grill basket until lightly charred.

Plate the salmon and vegetables to serve.
