Delicious Broccoli Salad

Try this recipe on a hot summer day. It’s best if prepared a few hours before eating so the ingredients have time to marinate. The end result is a fresh, tasty dish that is perfectly sweet, nutty, and crunchy!

What You’ll Need:
One pound of broccoli
Two white onions
Pine nuts
Olive oil

Cut broccoli into small, bite-sized pieces.
Fill a large pot with water, place on stove, and bring to a boil.
Blanch broccoli and chill in cold water.
Drain and place aside.
Slice onions.
In a cast-iron skillet, heat half olive oil, and half butter on low.
Add onions and a few pinches of salt. Allow onions to caramelize.
In a separate pan, heat olive oil and toast one cup pine nuts, until golden brown.
Drain broccoli and place in a large mixing bowl.
Drizzle with olive oil.
Once finished cooking, add caramelized onions and pine nuts.
Grate three cloves fresh garlic, and add to bowl.
Mix ingredients together, and allow to sit at room temperature for a couple of hours–this gives the flavors time to combine and marinate!
Serve and enjoy!
