Summer is the season for tomatoes, and for pasta salad, so why not combine the two? This recipe is a delicious rendition my college roommate used to make in a pinch. It’s simple, hearty, and delicious. Enjoy!
What You’ll Need:
One wheel of Brie
Salt and Pepper
Roughly chop up the brie and halve the tomatoes, then place them in a large bowl.
Drain, and add pasta to bowl.
Drizzle with Extra Virgin Olive Oil.
Pop some parsley in there, as well as two cloves of finely minced garlic.
Season salt and coarsely ground pepper.
Let the mixture stand for a while for the flavors to blend. Do this at room temperature so the brie has a chance to melt and the tomatoes release their juices from the salt, making the whole thing much creamier and more delicious!
Put a pot of water on to boil, add salt.
Once water is ready, pour in your pasta of choice and cook until complete.
Add pasta to room temperature mixture (while still warm) mix together, then serve and enjoy!
Can be served warm or cold.
