Looking for a new starch to spice up your meal? Try Socca! This flat, chickpea bread/pancake is quick to make, tasty, and it’s gluten free (in case you or your guests are gluten intolerant!).

What You’ll Need:
1 cup chickpea flour
1 cup water
1 tablespoon of olive oil (+ some for skillet)
Few shakes of granulated garlic
Few shakes of oregano
Few shakes of cumin
Few shakes of paprika

Directions:
Put oven on Broiler mode.
Combine all ingredients in a bowl with a whisk. Let sit for around 20 mins.
Meanwhile, heat up olive oil in cast iron skillet.
When batter is ready and oil is hot, pour batter into the skillet and let cook on medium high until there are bubbles coming through (like a pancake).
Transfer skillet into the top shelf of the oven and broil until golden brown on top, about 8-12 minutes.
Remove from oven, cool, and cut into pizza slices.
Enjoy with any Mediterranean style meal! Plus, save a re-toast for the morning!
