Golden Beets With Pistachio, Honey, and Mint

Just because you’re making a side dish, doesn’t mean it should be boring. This is a perfect way to elevate plain old boiled beets, and create a dish that will make your mouth water!

What You’ll Need:
3 or 4 large golden beets
Honey
Pistachios
Fresh mint
Salt and pepper
Olive Oil

Directions:
Fill a pot with water then bring it to a boil.
Add beets, and parboil. Remove from heat and run under cold water.
Peel beets (the peel should be easy to remove after partially cooking the beets.)
Slice beets to desired shape.
Add olive oil to a cast iron pan, then add beets.
Generously salt: (this will ensure that they caramelize).
Cover pan, and cook on medium-high, until beets are golden and browned.
Take a quarter cup of pistachios and roughly chop them, chop an equal amount of fresh mint. Take a teaspoon of honey and a teaspoon of olive oil and mix together.
Add mint, pistachios, and honey mixture to cooked beets.
Serve, and enjoy!
