My mom is a genius. She understands what people want to eat, and gosh-darn does she deliver. Last weekend, I was home in Vermont for memorial day, and she whipped up some hors d’oeuvre that pretty much blew my mind. She kept them a secret, refusing to tell me what she’d made, until the very last minute. “I want to surprise you!” She insisted. It was worth the wait. Here’s what she made, and how you can do it, so that you can wow your friends at the next summer cookout.
What You’ll Need:
Use your melon baller to create small spherical circles of cantaloupe.
Cut mozzarella into correspondingly sized cubes.
Tear prosciutto pieces in half.
Take a skewer and assemble ingredients in order, adding a leaf or two of fresh mint!
Place on a platter and drizzle with balsamic vinegar and olive oil.
