Smashed Fingerling Potatoes

This scrumptious side dish isn’t just fun to eat; it’s a blast to make! There is something so satisfying about squishing delicate little potatoes into smithereens with your fingers. It’s a great way to work-out some aggression, without doing any real harm, and making something delicious in the process!

What You’ll Need:
One lb. of fingerling potatoes
Red pepper flakes
Salt and pepper
Olive Oil
Cast iron pan

Heat water in a pan, add potatoes, and parboil; the potatoes should be soft enough to squish, but not fully cooked.
Remove from heat, and run under cold water.
When they are cooled enough to touch, place the potatoes on a baking sheet or counter, and press your thumb or fingers until they flatten!
They should smooch, but remain intact. Liberally add salt and pepper.
In a cast iron, add enough olive oil to fill cast iron about a centimeter high.
Heat on medium-high, add smashed potatoes to pan.
Add red pepper flakes and a generous amount of fresh Thyme (about 10 sprigs.)
When potatoes are crispy, flip over.
If necessary, add more olive oil. Remove from pan and pat off excess oil with a paper towel.
