You should be eating salad. You shouldn’t be eating boring salad! A simple way to add some pizzaz to your greens is to add a warm element. This works better when you use a hearty green (like Kale or Swiss Chard), because they hold up better against the heat. Try this tasty recipe for a hearty salad!
What You’ll Need:
Salt and Pepper
Remove stems, and chop Kale into small strips. Place Kale in bowl and massage with one tablespoon of olive oil. Squeeze one quarter of a lemon on top.
Heat a small cast-iron over medium heat. Place approximately one fourth of a cup of pine nuts in pan; toast until golden brown. Remove from pan and add to Kale.
Chop carrots into thirds, with a diagonal cut.
Heat one tablespoon olive oil in cast iron, add carrots, Salt + Pepper, and a tablespoon of maple syrup. Cook until tender. Remove from pan and add to salad.
Add a handful of raisins, then drizzle balsamic vinegar on top. Toss, and serve!
