The other night my mom called–as she often does–to tell me what she’d be making for dinner that night. The menu for the evening? Gnocchi with truffled wild mushroom sauce, Eggplant Rollatini (with goat cheese, roasted red pepper, and purscuitto) and Caprese salad, with Burrata. Damn. One of the many reasons I should probably give up on NYC and move home.
The most innovative part of this elaborate meal, though, was that my mom would be making homemade Gnocchi. And furthermore, she’d be doing so by using leftover potatoes and sweet potatoes from the previous night’s meal. Genius.
Making Gnocchi from scratch might seem like a daunting task, but really it’s not all that complicated. All you need is potatoes, egg, flour, salt to taste, and a little bit of patience to put the whole thing together. Using leftover potatoes removes one of the more time consuming steps of this process, and transforms your sad spuds into an impressive alternative.
Take a page out of my mom’s book and get creative with your leftovers. Your tummy and your wallet will thank you.
