Bacon egg and cheese sandwiches are a true breakfast staple and have even cracked their way into the brunch realm. With entire restaurants devoted to the bacon egg and cheese (BEC), it seems only fair that I include my own recipe for Sunday Brunch. Surprise surprise, it includes avocado.
What you’ll need:
1/2 cup egg whites
6-8 slices whole grain bread
6-8 slices bacon
First, scramble the eggs and egg whites together.
While the eggs are scrambling, toast the bread and cook the bacon.
Once the eggs are finished, plate the toast and place the scrambled eggs on one side. Add black pepper to taste and top with the bacon.
Mash the avocado on the other slice of bread and serve.
