Ratatouille
pronounced: rat-tah-toooooo-eeee
noun
1. a vegetable dish consisting of onions, courgettes, tomatoes, aubergines, and peppers
2. ideal for making a big batch on a Sunday and using all week to make delicious and different quick weekday suppers
3. great with grilled fish, chicken, sweet potatoes, for stuffing vegetables, as a pasta sauce, with a dollop of fromage blanc and chives, baked with some goats cheese, stirred through some quinoa and topped with avocado, adding beans, basil and chorizo to make a casserole
4. VERSATILE and yum and healthy and a great way to get in some 5 a day
5. great dinner party dish
The KEY to making this really flavoursome is lightly frying off all the veg individually before letting them stew in the passata all together. Also, I use passata instead of tinned tomatoes for a more intense tomato-ey, provencale flavour.
