So we wanted to highlight one of our favorite and most delicious anytime meals. Of course I’m talking about a Dutch Baby. Say what, sucka, you don’t know what a Dutch Baby is? Get out! No, seriously, get out. Okay, you don’t have to leave per se, but you do need to made fun of a little bit. So what is a Dutch Baby? It’s like the most epic and steroid ridden pancake you’ve ever seen. It comes to us from Germany and the Dutch Baby was a person it would totally be that bald guy from Raiders of the Lost Ark who takes off his shirt to bare knuckle box with Indiana Jones, and then of course gets chewed up and spat out by the airplane propeller. It’s a golden brown puffy pancake raised to perfection in a cast iron skillet.
Let’s tackle the making of the Dutch Baby. OK, you’ll need some stuff, specifically:
3 large eggs , or 2 Jumbo eggs
3/4 cup all purpose flour
1/2 tsp. salt
3/4 cup milk
2 tbs. melted butter or margarine
Cast Iron Skillet
Then you have to do this with them:
Heat oven to 450
Heat skillet with oven-proof handle in oven (below)
Crack eggs into a large mixing bowl
Add milk to the eggs
Add the flour and salt
Stir in melted butter
Into skillet (below)
Cook it up
And then it looks like this:
As for Dutch Baby makin’ music I chose my very first roommate from 17 years ago, Dean’s musical project Small Craft Advisory. Dean’s a super awesome cat and he lives in Portland. He had an EP come out on Marriage Reaords and now plays around Portland from time to time under the name Prayers from a Makeshift Morgue . He can call his project that because he is in his mid 30’s and he’s earned the right to do so. Also our old apartment was on W street and it was a two bedroom, one and a half bath charmer. In 1993 we paid the epic amount of $525 a month for that place. We’re old. Oh the times we had on W St. We were so punk rock because I don’t remember any of us actually having keys to the place, at least I didn’t.
