Fresh Salsa & Tortilla Chips


Fresh Salsa
(makes 1 quart)
6 medium sized tomatoes
1 medium sized onion
1 green pepper
2 limes
2 chili peppers
3 cloves of garlic
2 tbsp cilantro
1 tsp paprika
1 tsp crushed red pepper
1 tsp cumin
1/2 tsp salt
1/2 tsp pepper

-dice tomatoes, onion, green pepper, chili peppers

-mince garlic, cilantro

-combine above in a mixing bowl and add paprika, crushed red pepper, cumin, salt, and pepper

-cut limes in half and squeeze into the bowl (discard limes or dropping into a beverage for a ‘hint of lime’)

-mix all ingredients

Tortilla Chips
(makes roughly 17.5 ounces of chips)
8 tortillas
water
salt to taste

-preheat oven 375 degrees F

-tear or cut tortillas into desired chip sizes & shapes

-spread onto an ungreased baking sheet (some overlap is ok)

-sprinkle a dash of water over the chips

-sprinkle salt over the chips to taste

-bake for 10 minutes or until the chips are desired color, texture

-repeat as necessary to use up all 8 tortillas
